cold (or hot) potato/leek/onion soup

i made a great variation of vichysoisse —  good hot or cold
it ended up being vegan as i didn’t have any butter or dairy cream around….  sure you could alter the amounts of ingredients as you like.

following is what i tried.

finely cut up 2 leeks and about a cup of onions and “sweated” the leeks and onions  in tablespoon of olive oil over medium heat for about 10 minutes…don’t let it brown.     added a cup of water and very thinly sliced  potatoes—  about 3 golf ball sized baby potatoes, and simmered for about 15 minutes.   added pepper to taste.   put in blender  and  “liquified” all contents…    was going to add  soy milk creamer, (would have been about 1/2 cup)   but it seemed fine without doing that.  they say to add the cream after it has cooled before serving if you want to try..  i had half of it while it was still hot, then the other half the next day from the fridge.
